Besides the fact that they hold way more meat yield than Maine lobsters, the meat is much more sweeter and tender. All the Japanese sushi chefs value California Spinys for sashimi and sushi, and China goes wild over them.
As far as Caribbean and Florida Spiny Lobsters are concerned, the taste and flavor of the meat is similar to Maine Lobster. So, it’s not as sweet as the California Spinys.
